A central place in the hotel for this restaurant
The modern French restaurant: L’Esprit Nouveau, occupies a central place in the hotel. It is bathed in overhead light offered by an industrial-style glass roof.
This high place of life diffuses a chic and multifaceted atmosphere in the image of the Trocadéro district. It takes its name “L’Esprit Nouveau” from Le Corbusier’s review of the same name.
The aim of the latter was to highlight aesthetics, modernity and a certain visionary eye on art, architecture, literature and societal issues. The least we can say is that it’s a success!
Inspired by Le Corbusier
The furniture and decoration of the restaurant are directly inspired by Le Corbusier and the history of the surrounding district, thus echoing the ambition of the Chef’s cuisine. Robin Kubarek indeed draws its essence from locality and local products.
Also, just like the interplay of lines and curves present in the restaurant, the Chef in his culinary creations plays with perspectives, depth, circles of flavors and different textures.
L’Esprit Nouveau aims to be the extension of the Chef’s cuisine: colourful, conscientious, inspired by his local environment, creative. We love !

The Canopy restaurant is described by regulars as a place to live, a headquarters, a benchmark for the latest discoveries and/or trends. An exceptional chef: Robin Kubarek
Back on his journey
A graduate of the EPMT (Ecole de Paris des Métiers de la Table), he started out as a kitchen clerk at the Régina Paris hotel. He then moved to the Hilton Paris La Défense for nine years, until obtaining the position of sous-chef, which he held for three years. In 2020, he became chef at the Canopy by Hilton Paris Trocadéro for L’esprit Nouveau and for the Rooftop Eylau Paris.

His credo: respect nature and the seasons. To do this, nothing beats taking the products in their entirety and establishing relationships of trust with the producers. Focusing on quality in order to preserve flavor, this is his miracle recipe that makes your taste buds quiver.
